WHere is an easy take on a drink from a new cocktail list. Designed as a large-volume prepared mix that is loaded with the tastes of a festive period, making it perfect for hosting a holiday party. Save the extra cordial to use in breakfast cocktails, desserts, or for more rounds of this cocktail.
The Bikini Cocktail
Serves 10 guests
To make the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Syrup: Place all the components into a saucepan, bring to a gentle boil, stirring to dissolve. After that, remove from the stove and leave to cool down entirely. Decant into an clean bottle, seal keeping it chilled, it can be stored for up to four weeks.
For the Batch Mix: Combine the specified spirits and syrup into one sizeable container, let it rest for an hour, then pass it through preferably using muslin, to ensure it's completely strained.
For serving: Pour 85ml of the cocktail base into your mixing glass filled with ice, and agitate carefully for a minute until cold. Strain to a chilled martini glass or similar, top with some cranberries and complete it using a quick spritz with the mandarin essence over the top.
